from the leftover chicken and veggies from your chicken soup? I thought I would blend it all up in my food processor, add mayo, eggs, breadcrumbs, spices and fry them. Any input?

I've done it- I thought it was good- the rest of the family didn't like it- but they're VERY picky.

I made it. added 2-3 eggs, some matza meal and spices. mine didn't have enough chicken to be a main dish but it was a delicious side dish

I made more burgers then patties, but with cooked chicken and meat. It wasn't from the soup and the meat was from the chulent. I added eggs, not mayo and no bread crumbs on the outside, just a little on the inside to hold moisture, but it really didn't need it. I also grilled it on a "george foreman grill". Everybody loved it. I would think that if you use the chicken from the soup to make sure you spice it a lot because that type of chicken tends to be a bit bland.
