Cauliflower Popcorn - using frozen?

The Cauliflower Popcorn recipe from KBD Entertains - if I use frozen, how much should I use (in place of the "2 heads" called for in the recipe)? I have a 2 lb bag...

Also the recipe says to discard the stems. Do you do that when using frozen?

You can just use the frozen. Do not defrost. No worries about cutting off the stems. Just use the 2 lb. bag. That's what I've done.

(2 heads of cauliflower is probably closer to 3 lbs, but once you cut off the stems, 2 lbs. is probably what you are left with.)

Thanks for your reply.

Mina, here's the recipe:

2 heads cauliflower, cut head into medium sized florets, discard stems
1 tsp salt
2 tsp sugar
1/4 tsp onion powder
1/4 tsp garlic powder
1/2 tsp paprika
1/4-1/2 tsp turmeric
6-8 Tbsp olive oil

Preheat oven to 450F
line baking pan with baking paper
combine salt, sugar, onion powder garlic p, paprika, turmeric, and oil. Add cauliflower florets and toss to evenly coat.
Place in a single layer on the prepared sheet
Roast uncovered for 30-35 min. until largest pieces can be pierced w/ a fork. If the tops are starting to get too brown, toss the cauliflower during the baking process.

If anyone has tried this with frozen, does the cauliflower not come out mushy or soggy? Is it still crispy?

I do this all the time with frozen cauliflower and frozen broccoli. It's delicious.

make it with frozen, but have found that if you defrost it first (I usually lay them out on paper towel while I'm cooking other food), it comes out crispier, otherwise it's a little mushy.
