Recipe for Penne A La Vodak

This recipe is posted with permission by Estee Kafra from her cookbook cooking with color

1 package 16 oz penne noodles

1 tablespoon extra virgin olive oil

2 tablespoons butter

1 onion finely chopped

1 clove crushed garlic

1 teaspoon basil

1/2 teaspoon dried oregano

1 cup pizzza sauce

1 teaspoon kosher salt

black pepper

3 cups low fat milk

2/3 cup flour ( I use less bec it was too floury)

2 bay leaves

1 tablespoon vodka

cook noodles according to the package drain well and set asside

in a pan combine oil, and butter and melt over a low med heat, add onions and garlic sautee slowly after 5 minutes add basil and oregano and pizza sauce, salt and peper let simmer on a low heat until onions are soft about 1 min

meanwhile in another pan mix milk and flour wisk until smooth add ba leave simmer on a low heat for 10 min stirring occasionally . remove bay leaves

mix two sauces until well combined stir in vodka toss with hot pasta serve immediately

I can't get heavy cream here, so this recipe is perfect for me!

I made this from a similar recipe that I found in an old binah magazine. you have to be really careful with the flour/milk mixture - if you dont keep stirring it or if you leave it on too long it gets all lumpy and gross.

Are you sure its only 1 TBSP vodka? It seems like so little does it have the same taste? (If it does I am so making it)

yes it only needs one tablespoon its delicous just be carefull dont put in too much flour!!
