Cookies, no matter how healthy, are really not breakfast.
that said,
2 cups oatmeal in the food processor till it resembles flour
2 cups flour
3/4 cup brown sugar
1/2 cup sugar
1 cup oil
1 cup applesauce
1 tsp baking powder
1 tsp baking soda
1 cup raisins
Combine all, if its a bit dry add 1/4 cup applesauce at a time till it reaches the right consistency
place by spoonful on cookie sheets and bake at 350 for 10-12 minutes.

use the recipe on the top of the quaker oatmeal container , to make it healthier use whole wheat flour oil and less sugar to taste. Also use demerra sugar (unproccessed sugar) instead of the white and brown sugar.

Thank you.
I guess I should clarify something.
I do not need a sweetened cookie for the most part.
My toddler needs oatmeal (not sweetened or flavored- he doesn't like that kind) with prunes for breakfast most days. Lately he has been so anxious to get going that he stops before he is full. I would like to have something in a cookie FORM that he can take with him. (At least until I can teach him other eating standars - like sitting in the highchair or at the table...)

This recipe is from What to Expect The Toddler Years. I haven't tried it, but it always looked interesting to me.
1 cup whole wheat flour
3/4 cup wheat germ
1/2 cup rolled oats
2 tsp baking powder
2 tsp cinnamon
1/2 cup golden raisins
1/2 cup coarsely chopped apricots
1 cup apple juice concentrate
1/4 c. oil
1 egg
Mix flour, wheat germ, oats, baking powder, and cinnamon in a large mixing bowl.
Chop raisins and apricots together in blender or food processor; add the juice concentrate, oil, and egg, and blend. Add the mixture to the flour mixture and stir gently. Place in a bowl, cover, and refrigerate until thoroughly chilled, about 1 hour.
Preheat oven to 375. Lightly oil 2 baking sheets.
With slightly wet hands, shape the dough into 1 inch balls, and place onto baking sheets. Flatten them with the back of a fork (wet the fork lightly if the mixture sticks). Bake until lightly browned, about10 minutes. Remove to wire racks to cool.

You're both better off eating the oatmeal.

Thank you.
I hope to try the recipes and let you know how they (or at least the second 'untested' one came out)

Did you end up trying the cookies? If you did, I'm curious to know how they came out.
