Why do you need a recipe? Dip chicken cutlets in crushed cornflake crumbs (if you like, mix some spices in), and fry.

I dip it into beaten eggs first, then into cornflake crumbs which are mixed with salt, garlic powder, onion powder, and paprika. Then fry! You can do whichever spices you like.

I know this is late but I find this recipe to be fool proof and DELICIOUS.
Instead of fried, I put the chicken in the oven.
I use boneless chicken thighs (MUCH more moist), dip it into seasoned mayo (I season it with salt, pepper, paprika, garlic) and then unseasoned breadcrumbs or cornflakes. I put it in the oven for about half an hour or till golden brown and looks crispy on 400.
I know mayo is not the best but I like to believe that by not frying the schnitzel, it cancels each other out!!
