Pepper Crunch Salad
so good that it deserves its own thread, so it's not lost
2-1/2 cups ea of 3 different colored pepper, total of 7-1/2 c peppers, cut into 4 & then cut widthwise
3 Tbsp chopped dill
3 Tbsp chopped parsley
4 tsp mustard
6 Tbsp orange juice
3 Tbsp oil
4 tsp honey
2 tsp lemon juice
salt to taste (generous)
1/2 cup chopped roasted cashews
1/2 cup chopped salted roasted almonds
1/2 cup whole pine nuts, optional
1/2 cup chopped roasted pecans, optional
Slice pepper into strips. Put in bowl Add dill and parsley and mix gently. Set aside. Mix all dressing ingredients in small container. Shake well. A few hours before serving, pour over salad and toss to coat, to allow veggies to absorb the flavor of the dressing. Top with any or all of the nuts.
If peppers are fresh, this salad is still perfect a day or two later.

(While ra-mom does have fantastic recipes, I think she took this one out of a magazine, so maybe she can tell us who the originator of the recipe is?)

Yes, this recipe is from the Mishpacha, by Brynie Greisman.

Great Ra Mom. Maybe you can help me now.
I have a party tonight and I'm planning on making the first of the three salads in that issue. Problem is that I can't find the darn recipe and I need the recipe for the dressing.
Would you mind typing it up for me?

(Is this it by any chance? I have the basic recipe here with me. - I tried it last week.)
• lettuce greens
• 2 cucumbers, cut into half moons
• cherry tomatoes
• 1 carrot, peeled into strips and then cut in half
• mandarin oranges
• craisins
• candied almonds
Dressing
• ½ cup mayonnaise
• 3-4 Tbsp honey
• 2 Tbsp water
• 1 Tbsp Dijon or spicy brown mustard
