Hi Everyone,
I know there are loads of threads on potato kugel recipes, but I couldn't seem to find any that had really large quantities - I have 5lb/2.5kg of potatoes peeled in my kitchen at the moment, and want to turn it into kugel. There's another 5lb/2.5kg bag of potatoes sitting waiting to be peeled too!
Does anyone have a recipe for 5 - 10lb of potatoes? Does it freeze well?

Thanks so much | This is a deliciously dence, but soft kugel. Heavy. Pan gets finished in minutes.
1 (5 lb.) bag potatoes
9 eggs
1/2 onion, grated
1/2 cup oil
salt to taste (lots)
pepper to taste

9 eggs sounds like a lot. Does anyone have any recipes that use less eggs?

I dont have a recipe for you, but I do suggest baking them in small batches... they will bake faster and freeze better

I use the spice and spirit recipe. I triple it.
Works out at 18 potatoes and 9 eggs (I use 8)

Thanks | Yes, it is a heavy recipe. It's not my recipe, but it's delicious.
On average, 5 lbs. potatoes equals about 9 loose potatoes, though there is usually a bit more than that in a 5-lb. sack because the sack potatoes are a bit smaller
Maybe that will help you in figuring out which recipe to use. Good luck.

5 lb. potatoes
1 onion (omit if you don't like taste)
5 eggs (prefer to use 10 whites instead)
½ cup oil (nice to heat it in pan first, but not required)
1 tablespoon salt or to taste
1-2 tablespoon sugar
Grate everything together -- makes one large deep 9 x 13 or assorted smaller ones. Bake uncovered at 400 for about 1 hour.

Potato kugel tastes better after freezing if it's warmed up0 in cholent, or with the fat of the chicken on it.
