Hi, I love to bake challah and I usually brush it with an egg before baking but I never get that crispy crust on the top. The top just stays soft. Anyone know how to get that crispy crust on the challah?? Any tips would be greatly appreciated.

Up the heat for 20 minutes.

I should up the heat for the entire baking period and just bake for less time?

use only egg YOLK for brushing on top. Or maybe it's only egg WHITE? I forget.

No, you need to make the heat higher for the first like 20 minutes, then lower it for the rest of the baking time.
