Whole-Grain Zucchini Apple "Bread"
from Clean Eating Sept/Oct 2010, with my changes

‎1 1/4 cup whole wheat flour
1/4 cup spelt flour (you could prob. sub other whole grain flour or oats)
2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon (We like things zingy so I used 1 tsp 5-Spice powder)
pinch salt
grated apple
grated zucchini
egg
1/2 cup yogurt (I used light mayo)
1/4 cup honey

Mix and bake in loaf pan at 350 for about 45 minutes.

(Just want to add that I was grating carrots for another recipe, and didn't clean out the food proc. perfectly before I grated the apple and zucchini, and the "bread" has lovely orange flecks in it!)

how many portions does this serve? What's better about loaf pans? My guess is that it keeps the interior more moist. So if I double the recipe, will a 9x13 pan work? Will it come out drier?

I wish I knew the chemistry behind that. I make my honey cakes in a regular 9 by 13, despite the fact that the rest of the world uses loaf pans.

That's how I do my honeycakes; I would assume it's ok.

Okay, I don't want to be a noodge but zukes here come in many sizes from tiny to huge. Right now there are huge ones available. Should I use a half? Or more like a quarter of a really big one?
