Do you want to make something in the oven? Stovetop?
chicken Fajitas in oven or stovetop
chicken pastrami roll ups
kishka stuffed chicken
breaded baked honey teriyaki cutlets or honey mustard

Can I please have the recipes for the two bolded ones? They sound yummy! (The other ones are also yum, but I make those.)

Kishka Stuffed Chicken (KBD)
(this is half the recipe)
• 3 chicken breast halves (about 1.5 lbs. chicken breasts)
• 1/2 kishka, defrosted, all casings removed
• 2-½ Tbsp apricot preserves
• 1/2 cup corn flake crumbs
• honey
Preheat oven to 350.
Pound the chicken to an even 1/4-inch thickness.
Cut a 1-inch slice of kishka. Roll it into a log (shaped like a hot dog) and place into the center of a flattened cutlet. Repeat with remaining 2 chicken breast halves.
Roll the cutlets around the kishka, tucking in the ends.
Brush each roll with apricot preserves and dip into cornflake crumbs, coating all sides.
Place seam-side-down into a baking pan.
Lightly drizzle with honey.
Bake, uncovered, for 30 minutes. Allow to stand for 10 minutes. Lightly drizzle with more honey.
Serve sliced or whole.

I made the fajitas lastnight with mushrooms instead of a second pepper and curry instead of cumin(didnt have any)- it was so yum!

We stumbled on a variation of the chicken fajitas. Instead of fajitas sauce (we get it in a jar), we got a sweet and sour sauce instead (same company, same jar). It was really good. We also make it from leftover shabbos chicken.

I made the Chicken Fajitas and they came out great.
I just want to check, is it 1 1/4 tsp or 1 1/4 tbsp cumin?

1+1/4 tsp. Thank you so much for pointing out the typo in my post. I must have left out the measurement spoon when I typed it. Fixing it now.
