I have three medium sized portabella mushrooms. What can I do with them for Shabbos?

drizzle with evoo, salt, and grill or roast. Yum! Drizzle with balsamic vinegar if you want.

this is a heaven salad you can use them in
Tri color pepper asparagus salad

4 portobello mushrooms
1 bunch asparagus
1 red pepper
1 yellow pepper
1 orange pepper

Dressing: (it is a very large dressing so if you want less make the amounts in the parenthesis)
1 cup olive oil (⅓ cup)
¾ cup vinegar (¼ cup)
5 tbsp sugar (1 tbsp)
1 tbsp salt (easy)
1 tsp pepper
1 clove of garlic crushed

Place the mushrooms and asparagus on a cookie sheet. Sprinkle with salt and pepper and grill for 5 to 7 minutes.
Slice the peppers and grilled mushrooms and asparagus into a bowl.
In another bowl mix together dressing ingredients.
Pour dressing over salad.

You can make a portobello mushroom salad with romain (or spinach), portobello, and grape tomatoes. Dressing is a creamy balsamic. If you'd like the recipe, let me know.
You can also make portobello mushroom pizza for motzei shabbos. (low/no carb)

You can brush the mushrooms, some red and yellow peppers, slices tomatoes, and onions with a mixture of extra virgin olive oil, balsamic vinegar, and crushed garlic and then grill or roast them, and then make a "stack" of the sliced vegetables on little individual plates as an appetizer. You can sprinkle some minced basil on each stack-- heavenly!
