Crockpot Chicken for Shabbos Day?

I have a yummy chicken (quarters) recipe that I want to make in the crockpot for shabbos day. Should I add water into the recipe so that it shouldn't dry out, do I cook it on low overnight or do I cook it fully before shabbos and then just keep it on warm overnight?

I have found that crockpot chicken loses it's flavor and texture, even with enough water. But that might be me, as I don't like overcooked chicken.

Don't add water unless you are just placing a tiny bit on the bottom of the crock.
Turn it to the keep warm setting for the duration of Shabbos.

It might be a drop overcooked, but this is your best bet.
Make sure to rub the chicken with olive oil, keep the skin on, and if using a whole chicken, place it breast side down when cooking.
Placing it in a crockpot bag after it's cooked, with water underneath the bag, might help too.

Do you have any better crockpot recipes that won't dry out using chicken quarters?

This is really great. Very juicy. (When I'm short on time I just use 4-6 cloves of garlic, cut in half.)
