Need sweet potato doughless knish recipe

Someone once told me about individual doughless sweet poato knish recipe is you can you kindly post it?

The nitra simchah cookbook has a recipe for doughless potato knishes. I guess you can substite it for sweet potatoes and for Pesach you can put potato starch instead of flour.

I believe you can use 5/8 of a cup potato starch (10 Tbsp), for 1 cup of flour (not easy to convert a cake recipe, but I would definately try to convert a recipe like this.)
I've converted a recipe for you.

Potato Puffs
• 1 onion
• 4 Tbsp oil
• 4 potatoes or sweet potatoes, peeled and cooked
• 2 eggs
• 7.5 Tbsp potato starch (instead of 3/4 cup flour aka 12 Tbsp flour)
• salt and pepper to taste
• 1 more egg, for egg wash

Sauce an onion until soft in 4 Tbsp oil.
Cook up potatoes/sweet potatoes; mash. Add eggs, potato starch (flour), salt and pepper; mix well.
Spray cookie sheet very well with cooking spray. Scoop out potato mixture (with an ice cream scooper) to form little puffs on onto cookie sheet.
Brush / smear top of puffs with egg.
Bake uncovered at 400 for about 1 hour.

How many potato puffs does this make and do you think this recipe would freeze as I'd like to make them ahead for the Purim seuda.

There are 16 Tbsp in a cup.
4 in 1/4 cup.
8 in 1/2 cup.
12 in 3/4.

Please note that I did not try this recipe with the potato starch substitute. This is just how I would do it if I needed to convert a recipe.
