"Shrimp" and tomato pilaf
from the Claude Roden book and SCRUMPTUOUS !
serves 6-8

2 lbs fresh tomatoes, or equal amount of tomato sauce
chopped onion
oil
4 chopped cloves garlic
1/2 chili pepper, optional
2 cups raw rice, or leftover rice
salt and pepper to taste
2 tsp sugar
1 tsp cinnamon
package of the Kosher shrimp or lobster
2 lemons, quartered

Saute the onion and add your garlic and the burney pepper if you are using it. Blend and add your tomatoes or sauce.

If your rice is raw, add the raw rice and water to cook it in. Ad the salt, pepper, sugar, and bring to the boil and let cook for 15 or 20 minutes.

If your rice is fully cooked, add the rice, heat until warm and then add your fish and the spices.

Serve warm, with lemon to squeeze on top.
