Does anyone have such a recipe that I could make for Shabbos lunch? Preferably with a really yummy dressing and ingredients I would have on hand.

Believe it or not Osem's 1000 Island is really good. It's mild and not heavy like the American kind.
Lettuce, shredded hard boiled egg, avocado, orange or red bell peppers and sliced green onions would make a nice salad tossed or topped with the chicken.
There is always the go-to taco salad: dressing is just half salsa half mayo
Salad of lettuce, corn, kidney beans, sliced tomatoes, avocado and red onion. I'd also chop up some cilantro and sprinkle it over the bowl.
Have fun with it!

actually kosher by design I think short on time has one that is amazing... its for grilled chicken.. I will get the recipe if u want

blackened mixed grill salad- KBD short on time
dressing:
1/4 cup mayo
1 T + 1 tsp Lemon Juice
1/2 tsp oregano
1/2 tsp hot sauce
1/4 tsp garlic powder

I did for my purim Seudah (for 50 people) - mixed green, sliced purple onion, baby plum tomatoes and chicken strips which I had actually fried like shnitzel but with a cajun spice mix instead of breading, but spiced grilled chicken would be just as good. I used the dressing from the bissli salad http://imamother.com/forum/vie.....rt=40 I was going to sprinkle croutons over as well, but forgot, and it was still delicious.

That souns amazing and just what I am looking for. I think I am going to pan fry the shnitzel with salt, garlic and paprika.

This is our favorite:
1 pkg chicken cutlets marinated in bbq sauce and grilled
1 bag lettuce
grape tomatoes
Dressing:
3 Tablespoon soy sauce
1/2 cup oil
1/4 cup vinegar
1/4 cup sugar
4 cloves garlic-crushed
You can add any veggies u like.
I mix the dressing before shabbos and pour it over salad before serving.

Chicken Poppy Seed Salad
Dressing
1 c. oil
¾ c. sugar
1 tsp. dry mustard
2 Tbl minced onions—fresh.
1/3 c. apple cider vinegar
1 tsp. salt
1 Tbl poppy seeds
Put all ingredients except poppy seeds in a hand blender bowl; blend it just till it’s combined, not over-blended. After that, add poppy seeds.
Salad:
Chicken cutlets
Italian dressing
1 bag Romaine lettuce
1 small can mandarin oranges.
Slivered almonds
CraisensCucumber (optional, for color)
Take chicken cutlets, marinate it with Italian dressing, and bake on 400 for 20 min. Add lettuce and mandarin oranges. Sprinkle slivered almonds, craisens, and cucumber, if desired. Pour over the dressing.
I have done this also by grilling the cuttlet or use plain grilled cuttlet that was just spiced
