I've never made matzo balls before, but of those that I've had by others, sometimes they're hard and sometimes they're light and fluffy. I'm looking for a recipe for the latter, that doesn't call for chicken shmaltz.
Anyone have a good one?

or if you don't have seltzer
1 cup matzo meal
1/2 cup water
1/3 cup oil
4 beaten eggs
salt and pepper
Mix ingredients, leave in fridge for an hour.
Drop in boiling water/salt and cook for 20 mins.
I often need to add more matzo meal to this as it comes out a bit too moist. Keep the balls small as they expand a lot.
