Slice up onions and fry with salt and pepper (and paprika if u use it) until onions are translucent. Remove from pan and add oil if necessary. (Leave as much liquid in pan as possible.)

Pound chicken cutlets until thin, dredge in potato starch and fry for exactly 4 minutes on each side, over medium heat.

Put chicken cutlet on plate and top with fried onions

I serve this on Chol Hamoed with potato blintzes on the side.

We do the same, except not potato starch; just egg and ground almonds. It's a seder favorite.

Mashed potato chips make a great crust, but I know many don't buy anything processed so don't know if that would work for you.

Use ground almonds. Walnuts will taste bitter.

Depends on how big it is I guess - as much as you usually cook it - 15 -30 minutes depending on your oven...

for those who suggested using ground nuts -- how do you ground them? I just made for Shabbos - chicken fingers with ground almonds and wheat berries (its all I had in the house Smile - I used a blender to ground them - but im wondering if there is a better way.

Any ideas ?

Almonds are best, Filberts (hazelnut) are a close second. Walnuts are gross...

A nut grinder? My mother has one. It's a good 50 years old - probably more - but it does a lovely job, if you don't mind having to manually turn the handle.

For a real Pesach treat for the kids, we grind potato chips and put them on the cutlets and fry.
