The Chocolate Hazelnut Macaroons - Pesach
from Good Housekeeping
1 cup hazelnuts or other nuts
1 cup sugar
1/4 cup cocoa, unsweetened
1 oz chocolate chips
pinch salt
2 egg whites
1 tsp vanilla
Line 2 cookie sheets with foil. If using hazelnuts, toasted at 350 for about 15 minutes until you can rub off the skins.
In food processor, pulse the nuts with the sugar, cocoa, chocolate and salt. Add your egg whites and vanilla and process until well blended.
Drop by teaspoons onto your cookie sheets and bake for about 10 minutes or until the tops look dry. Let cool and store. Freezes well.
You can eat them as-is, or spread melted chocolate in the center and make a sandwich cookie.

Do you know the quantity of ground hazelnuts needed, here we can buy ground hazelnuts for pesach, so I'd rather use them instead of going to the trouble of grinding my own.
