I want to make a sauce for vegetable blintzes, but I don't have soup mix or mushrooms.
Any ideas?

I would saute diced onions, dissolve 2 tsp potato starch dissolved in 1 cup cold chicken soup, add to pot, stir until thickened, season with salt and pepper to taste, then remove from heat,
