Good ideas to "recycle" roasted chicken pieces?

I usually convert leftover roasted chicken into chicken & rice but it won't work for pesach. Is there anyway I can make a decent meal out of roasted chicken leftover from shabbat? The problem is, it's rather dry as it was sitting on plata on shabbat morning. Would the chicken taste juicy and moist if I recook in chicken broth?

Fry an onion and some boiled potatoes. Add the chicken (cut off the bone and into smaller pieces). One time I added some chicken broth, one time some white wine. (my chicken was cooked with tomatoes, onions, white wine and rosemary, so didn't add any extra spices).

Delish as a salad...just add veggies and a dressing....Oil and vinegar are great.

OR mix with some leftover soup, sauteed veggies.

You could also grind and make into patties if you have something to grind them with...

I would also use the cut up chicken pieces to garnish a leafy salad.

I have a lot of recipes here. You can even add it to soup.

Do you have enough fresh food for this yomto ? You can freeze it for another time.

The weather is a bit hot for soup, and no duck sauce. In the end I'm making half into stir-fry and another half into chicken pie (sauteed onions, added half tin mushrooms, topping with mashed potato). A bit limited repertoire as supermarkets are all closed and I had to improvise whatever I had in the house. But all other ideas sound great!

seems like you figured it out already but recently I had a chicken salad that a friend made with leftover chicken... she chopped up the chicken, mixed it with celery, green apple and mayonaise and it was quite yummy
