Veal neck roast?!??!

just bought 2 lb veal neck roast.. any ideas how to make it?
I was told to put white wine aand onions and cook it at 500 for 20 min uncovered then 2.5 hours on 350 covered does tht make sense? 500 sounds like very high temperature

Sounds right. Don't worry about the high temperature for 20 minutes.

made this on pesach (using starch instead of flour) it was ammmmaaaaazzing! I used more rosemary than it called for. it was awesome
