The Chicken Cacciatore (Uses leftovers)
From Prevention magazine
Makes 4 servings

4 oz pasta, leftover is awesome!
olive oil
1 lb chicken, cut up
8 oz cut up mushrooms, any kind
1/2 pepper, cut into strips
1 small cut up onion
2 minced garlic cloves
pinch of pepper
14 oz diced tomatoes, flavored is OK too
20 pitted black olives
1 T parsley

Prepare your pasta or grain, if not using leftover. If not using leftover chicken, heat oil and add your raw chicken.

In pan, with 2 tsp oil, cover and cook your mushrooms, peppers, onion, garlic and pepper, for about three minutes. Uncover and let cook for about 8 minutes, letting liquid evaporate. Stir in your tomatoes and the chicken. Add the pasta or other grain, the olives and parsley. Serve.
