Chicken A La Calabrese
From Family Circle
Makes 8 servings

1 cut up chicken, leftovers are fine
oil
cut up onion
2 cut up peppers
3 minced cloves of garlic
28 oz canned tomato puree
1/2 cup white wine, any kind
salt and pepper to taste
1/4 cup fresh parsley
1/4 cup fresh mint
3/4 lb grain or noodles, leftovers work too

If chicken is raw, bake at 450 for about 15 minutes. Meanwhile, heat up oil and add your onion, peppers, and garlic. Let cook about 5 minutes, add your tomatoes, wine, salt and pepper. Let cook about 10 minutes, breaking up tomatoes, and then add your herbs.

Pour over chicken and let bake another half hour. If chicken is leftover, just heat. Serve with your grain.
