I do this every week. Its my favourite
First cook salmon in onions ringlets for 25 minutes. Remove water. Then in other pot boil 1cup sugar, 1tsp salt, 1 and quarter cup water and 3/4cup vinegar. Bring to boil pour over fish then add pickleing spice. Refrigerate 24hour before use.

1 cup vinegar
1 cup ketchup
1 cup water
1/2 cup sugar
1 1/2 tsp salt
2 tblsp picking spices

Mix the marinade ingredients together and put into a container.

Boil water for the salmon, drop salmon slices in, boil 7 minutes. Put in container with the marinade.
Marinate for a few days.
(For 15 full slices you need to multiply the recipe 4 times).

I sometimes re-use the marinade after the salmon is eaten, and put a new batch of salmon in the same marinade.

I use the one from What's Cooking. I don't have it on me, but it has 1/2 cup ketchup, mayo, vinegar, sugar, water, and bay leaves (I think). If you're interested, I can look up the exact recipe for you later.

I use a simple and easy one; don't have it on hand, I think this is it:

4-6 slices salmon
1 large onion
1 cup sugar

*Heat cut-up onion and sugar on low flame until sugar is dissolved (liquid).

Mix:
1/4 cup lemon juice
1/4 cup vinegar
6 tablespoons sugar
1/2 tsp salt
4 bay leaves
3 1/2 cups water

Add to pot, and bring to boil.
Add fish, and cook for 40 minutes.

It's simpler than it sounds, and has the perfect marinated taste - not too spicy, yet full of flavor. It's worth a try!

Enjoy!

Wow thank you for your replies. Now I have too many to choose from LOL

Sugar is ok, just didn't want the typical recipe with the brown sugar.
Thanks all!

I do the same recipe as o'mom except I do 1 tsp. salt. I have this recipe from the Pupa cookbook. I only cook it for 20 minutes. It's very easy & delicious.

My favorite salmon recipe;

1 lg onion sliced
3/4 c sugar (white)
1 c water
1 t salt
1/4 c vinager
3 bay leaves
4 cloves
1 lb salmon or 4 fillets

Preheat oven to 350.
Place onion and sugar in a pot and boil until sugar is "melted" stir often to prevent burning.
Once sugar is liquid add water, salt, vinager, bay leaves and cloves, bring to a boil.
Put salmon pieces into a pan. Pour mixture on top.
Cover pan and cook in the oven for 25 minutes.
Turn off the oven, but keep the pan in the closed over for another 10 minutes.
Cool.
Refigerate.
For best flavor allow 36 hours before serving (the more the better).
Enjoy!
