Once again- can someone please specify what kind of pickles to put in? You all said you add pickles to the salad, but what kind? israeli, dill?

Sour pickles.
(But you can really use any. It's all a matter of taste.)

boil potatoes and a carrot or two, cube potatoes, cut carrot really small. cut pickles really small
add mayo mustard and salt while hot.

it is unbelievable, everyone raves about it.

the trick? mayo into the hot potatoes, I do the same with my egg dip, mayo into hot hard boiled eggs and everyone raves!!!!!!

thanx for posting this... I actually had this once at a friend and it was really good! just to clarify, what kind of pickles do u use? also, are the carrots raw when you put them in the salad? do u serve the salad hot or cold? or it doesn't matter?

The carrots are cooked int the same pot as the potatoes, and I generally use pickles in brine but any will do. I LOVE it when it is hot, but I serve it both ways, my dh loves this salad, cold hot and whenever possible! Very Happy

To answer the question about the mayo melting, it definitely doesn't it just blends really well and does not slide off the potatoes. I could see that happening if I had a perfect cubed potato salad where the cubes weren't soft, but mine are so that the sliding off does not happen.

Peel potatoes
Boil
Cube when cooled (I find it much easier to cut when they are cold)
A few pickles (I've used all types, but find the more European sweet and sour ones taste best) chopped
An apple chopped (abt same size as pickles)
One purple onion chopped

Mayo
Salt
Pepper
Sometimes a bit of pickle juice or vinegar if it's too thick

Yummy!
