I am making both evenings in my house, and apparently, we are doing both meals fleishig.
For the days, we will be invited to all dairy meals, so I'm good
Ok, so I read all those great shavuos recipes and menus, but it doesn't help me much, since mostly, everything is dairy...
So, please share: What is your fleishif shavuos menu?
For the first night, I will have
Homemade whole wheat challah rolls
Onion rolls
Salmon (I m not sure how yet. Prob. may in the oven)
One fresh salad (please help me decide a fancy one not too expensive)
Asparagus soup (I read the recipe here and it looks yummy!)
Rack of lamb (we have it since Pesach)
But I'm not sure what to make with it. If anyone has any ideas, please do share!
Also, because yomtov starts so late, I don't want to make it too heavy and be left with tons of leftovers.

Night: (only me and DH who doesnt eat much)
Salmon (either cooked in wine with mustard dressing or a pickled-type salmon)
vegetable soup
Hawaiian chicken
Jewel-toned orzo
individual broccoli kugel
Day: (with guests)
some type of fruit
potato pouches with mushroom sauce
mushroom barley soup
French roast
chicken nuggets with lemon sauce
garlic green beans
mashed potatoes with fried onions
individual yerushalmi kugel
carrot muffins
Both meals:
homemade challah, garlic knots, onion rolls
lettuce salad [honey mustard dressing/ceasar dressing]
broccoli salad
cole slaw
I'm looking for dessert ideas....

No real recipe, a bunch of green beans, a drop of oil, salt, pepper, 2 frozen garlic cubes or 2 cloves of crushed garlic. Put everything in a frying pan and cook until green beans soften, do not let them get limp. I have also done this in a foil pan in the oven and it comes out great.
mummy, when I have a few minutes to pull out my recipes I'll post that for you.

I think I will make quinoa for the meat side, and for fish I will make trout with almonds.

Chicken nuggets:
3/4 c corn starch
3/4 c flour
2 t baking powder
1 t baking soda
1 c cold water
Mix ingredients and dip small pieces of chicken cutlets. Fry on both sides until golden.
Lemon Sauce:
1 c chicken broth
5 T sugar
5 T lemon juice
1 T white vinegar
Mix ingredients in saucepan. Bring to a boil. Lower flame and simmer for 3 minutes.
In a separate bowl, mix 2 T corn starch and 2 t water. While mixing the sauce, pour in the corn starch mixture. Simmer for another minute.

Mini Chicken Wellingtons with Celery Sauce
Dessert:
Caramelized pear Tart
Fruit Salad
Main Dish:
Salmon:
- Shviger's Salmon recipe on spaghetti
- Taryaki Salmon with Spaghetti
Chicken:
- Sesame chicken
- ??????
Soup:
Butternut Squash soup
Chicken vegetable soup - I would love to make Kreplach but I dont think it will happen..
