just makes it thicker & less dietetic than, say, carrots, celery, zuccini. Depends what you want to accomplish. does make it more filling...also not as good for freezing, perhaps.

Yes. For sure. I saute veggies & blend them with a hand blender & then add water & cubed potatoes.

thanks for all your replies. I usually make the same soup every week, carrots, swett potatoes, zuchinni, onion, garlic. everyone likes it, but im looking for a little variety. also, will it get too mushy if I leave it on the blech for a couple of hours?

If you leave it chunky or mash by hand, potatoes are fine. If you're blending it, a few potatoes are fine but I've found that too many can make the soup gluey. It might also depend on the type of potato.
