A DEVIL OF A CAKE
From King Arthur


CAKE
1 1/2 cups brown sugar
1 cup shortening
4 eggs
1 2/3 cups flour
1 1/4 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
3/4 cup cocoa powder
1 cup milk or other liquid

FILLING
1 stick margarine
2 cups Confectionary sugar
2 tsp vanilla extract
2 – 3 T milk or other liquid
1 cup Marshmallow fluff

GLAZE
1 cup chocolate pieces
1/4 cup or 1/2 stick margarine
1/2 cup yogurt, sour cream, mayonnaise, or the like
2 1/2 cup Confectionary sugar

Cake:
Beat together sugar and shortening. Add eggs, one at a time, beating until fluffy. Whisk together dry ingredients and add to wet ingredients alternately, beating well. Preheat oven to 350 and lightly grease and flour two 9” pans. Spoon batter into pan and bake 25-30 minutes or until done.

Filling:
Beat together the margarine, sugar, and vanilla until fluffy. Add liquid one T at a time until spreadable. Mix in the marshmallow fluff and spread on top of one of the layers.

Glaze:
Melt together chocolate and margarine; stir in next ingredient and sugar and beat until smooth. Spread onto cake immediately as it thickens quckly.s

Makes about 16 servings.

question on the glaze I don't want to make the cake dairy. did you try it with mayo???

I actually have the pareve sour cream. from tofutti. but I have used mayo before and it's fine.

Well - it was really great!

The top was like a chocolate bar; the inside creamy marshmallow which DD loves,and the cake was a rich chocolatey cinnamon.

Did anyone else make it?
