Did anyone post their 9-days menus?

I made our menu for the next few days, until Tisha B'av.........

Wed - lox sandwiches and salad

Thurs - waffles and fruit salad

Sunday - milchig kugel and salad

Monday - blintz bake from Kraft foods and prob. tomato soup

Tue - tuna fish on puffed pastry dough and some sort of (unnamed) veg.

Wed - broccoli rigatonni (noodles, white sauce, and broc)

Sarahg, can you give me the broccoli recipe? Sound YUM!

heres my menu:

Today- grilled rainbow trout with lemon and Eggplant parmasan
Thursday- Left over eggplant P with baked Talapia
Sunday - Fettuccinin Alfredo with baked salmon peices in it
Monday - Mushroom Onion Quiche, Vegetable puree soup and greek salad
Tuesday - Baked flounder, Mashed Potatos, greek salad
Wed- Breakfast food - Vg omelette with cheese, spring salad, toasted bagel with cream cheese

Mumsy, may I come for dinner? When do you superladies find the time and brainpower to come up with and execute such dinners?
We will probably have pizza, baked ziti, ministrone soup, omelets, salmon, flounder, baked/mashed potatoes, salad, grilled veggies and stuff like that, but I do not have a set menu!

I'm a SAHM so I have time during the day. I had to make a menu so I knew what to buy. I like to go shopping once for the whole week.

Oh, I would also make vegetarian chili and fish tacos, but not everyone is interested in stuff like that.

Cheesy Broccoli Rigatoni
from a Taste of Home

12 oz rigatoni or med. tube pasta
3 garlic cloves, minced
1/4 cup butter or marg
1/4 cup flour
1 tsp salt - optional

2 1/2 cups milk
1 T olive oil
5 C broccoli florets
2 cups mozzarella cheese, divided

Cook pasta and set aside. You can even do this a day or 2 before, to save time.

Make the white sauce by sauteeing garlic in butter over med. heat for 2 minutes and then blend in the flour and salt. Add milk gradually. Boil and then cook for 2 minutes or until thick. Set aside.

Cook broccoli in 1 inch of water in saucepan for about five minutes or until crisp-tender. (You can also do this in advance if you want to.)

Then, in 9 by 13 deep baking dish coated with cooking spray, layer one cup white sauce, half your pasta and broccoli, and then 1/2 cup cheese.

Repeat layers. Cover with remaining sauce and cheese and cover and bake at 350 until heated through, about 30 minutes.

Makes 10 servings.

280 calories; 11 g fat - 6 saturated, 27 mg cholesteral, 434 mg sodium 34 g carbs, 2 g fiber, 14 grams protein.

I just made this and it was really good!! As a personal preference, I added an onion with the garlic. I added the pasta and broccoli all to the sauce after I made it and mixed it all together - skipped all the layering and making another dish dirty! Wink

Ugh just thinking about a week of cheese is giving me headaches (I cant eat so much cheese it gives me sinus infections Sad )
but I can imagine my menu being something like this:
lasagne,
quiche,
pizza,
pasta and cheese,
french fries, roast veg and cheese omelettes
tuna in pastry with rice
rice, cheese and tomatoes (although dh doesnt like)
and maybe french bread and salad another night.

hey I think thats every night covered...wow! I never thought I would get through that lol

I have a pareve paella recipe posted here and a sausage and pepper recipe. I also have various pasta dishes without cheese.

No need to cheese up and make yourself sick.
