Anyone have any good recipes for dark chicken cutlets. I've never used dark before. Can I do any of my regular chicken cutlet recipes?

I once tried breading it like regular cutlets, but my family didn't like it.

I second that- it's really easy, fast and tasty. Sometimes I make a salad and put the chicken with it in a warm pita.

My DS1 and I absolutely love dark meat chicken cutlets! All I do is bread and bake them (20 mins each side at 350F).

I also like using it for the "stuffed" recipes because it doesn't dry out the way white meat cutlets sometimes do.
My favorite is to brush it with honey-mustard sauce, give it a very light coating of bread crumbs, and then wrap it around a broccoli stalk. It tastes great and looks pretty.
