You didn't say where you will be going from.. Raleigh is a good option, if you're in New York. I was there last year Shabes Nachamu and it was beautiful. They have a minyan and include food.
Or you may check your local papers, you'll find many ads.

All the hotel rooms in the catskills are run down, even if their lobbys are redone (if you could call it that.)
