Curry roasted chicken with Okra
from Real Simple magazine
chicken, any kind
2 tsp curry powder
salt and pepper to taste
1 lb okra (I used a bag of frozen)
quarter cup fresh cilantro springs or sprinkle of dried thyme
fresh lemon, cut up
Preheat your oven to 450. Place your chicken in a baking pan with the spices sprinkled on top. Add the okra and lemon and bake until done.
Alternatively, you can saute the chicken in a little oil in a large pan, adding your okra after about 10 minutes, then baking in the saucepan or transferring everything to a baking pan.
A third option is to put rice (leftover is fine) in the pan before adding your sauteed chicken and okra (this is what I did).
