I'm a big fan of zucchini and always looking for new recipes in a healthy version. And being that I work full time, I cook in bulk.
How do you efficiently cut zucchini so that it shouldn't take that much time and feel like a huge chore?
Do you use a food processor or slice it, dice it, etc....?
Any recipe ideas?

I like it cooked plain in water. I peel it and cut it in chunks. You can make zucchini soup. peel and cut it in chunks and then when the soup is ready, blend it with an immersion blender. (to make the soup: fry onions, then add the zucchini and some potatoes and parsley and dill. Add water and let it cook...Add salt.)

depending what I want it for. I chunk it for zukini sautee. Chop it in my onion chopper for kugel. Slice it for chicken soup. Shred it in food processor for my vegetable soup.

Try it Saute with Onions, add Tomato Sauce and spices.

slice it in the food processor for sauteed zucchini
grate it in the food processor for kugel
cut into huge chunks for soup, then puree with hand blender once cooked
