Hi All

I really need your help. I am making seders for the first time in my life, which is super daunting enough, but I've mostly got my recipes sorted. Except that my sister is vegetarian, on a low fibre diet (no onions, anything particularly brown, low carb, no vegetable skins) and I want her to have something nutritious for seder.

First night I'm making chicken, second night meatballs so I'm looking for some parve alternatives. Probably my sister will be around for a few days before Pesach to help me cook which is good, but I was wondering if any of you have something awesome up your sleeves.

I'm guessing she doesn't eat kitniyot on Pesach?

What about quinoa?

I'd probably go with a vegetable soup and a quiche for one meal, and roast (peeled) vegetables and some kind of patty (eg sweet potato latkas) for the other. Assuming she can also eat the matza, salads, mashed potatoes, etc. And if she can eat quinoa I'd definitely make that too.

We love quinoa on Pesach. Our Rav has us check the quinoa before Pesach to make sure that no other loose grains are stuck in the batch.

Is your sister vegetarian, or vegan? If she is vegetarian, what is it that she does eat? Dairy? Eggs?

She's vegetarian but she's on a special low fibre diet for specific digestive problems which is quite restrictive. She can definitely have egg and dairy, but I'd prefer something not dairy so I'm not all mixed up in my kitchen, and she only eats the white from eggs (fussy rather than diet).

You can make mock chopped liver with hard eggs, nuts and vegetables. I'm sure you can use just hard boiled egg whites. It will give you a Parve protein idea that you can serve at the meaty table. You can serve that over nut crumbed eggplant slices.

If you're okay with some bought dairy protein options, you can mix them with other parve homemade dishes to complete them, without disturbing your kitchen.

She can eat cubes of cheese smothered in parve homemade pesto before the meal, for protein. Just as an example.

At the meal you can serve her portobello mushroom steaks, when you are serving meat for your family.

Gnocchi is filling and delicious (another thing you can serve with the pesto.)

Nuts are a low protein option.

Basically make filling vegetarian side dishes for the meals, and have bought dairy protein available for her to eat between meals.

we're mostly vegetarian, but the low fiber thing makes your sister's diet challenging.
what we do on pesach (we also usually host a diabetic guest) is lots and lots of soups. I like the pureed soups, they tend to be very filling with a bit of matzo on the side and a green salad, personally I am full.
I roast lots of vegetables, pretty much anything that doesnt run away, load it on my plate with a scoop of tuna and I'm good to go.
and we love love love quinoa on pesach.
will she eat fish?

Thanks everyone for your awesome ideas, any I don't use I will pass on to my sis for when she's cooking for herself. I should have probably added that she'll eat all the sides that I'll make, and I'll be making her a vegetable soup. I also have an inkling that nuts and seeds have to be minimised too but I will be checking all these things.

Quinoa is pretty high in fiber 7grams of fiber per 100 grams vs onions which are 1.7 grams of fiber per 100 grams...

(Normally I'd get upset at people asking Pesach questions in Tevet but since you do have an extremely challenging situation, I'll give you a pass Very Happy Very Happy )

Thanks for the let Wink In my family RH is considered late for talking about seder. 2nd night seder is usually when the debate about who is going where for next year starts. Add to this that my sis sees her specialist only once every 6-8 weeks well there's only 1 (maybe 2) more visits before Pesach shock

I think eggplant is an option skinless of course (so no stuffing). It is an idea that had popped into my head that I could make meatlessballs with aubergine and matzo meal and something else...but no idea how to actually do that.

Looks like courgettes, peppers, carrots, beetroots, celery, leeks, cucumber, pumpkin, mushrooms, sweetpotato are all relatively low fibre, all 3g or less.

for side dish, you can do ratatouille (peel aubergine), roasted peppers, roasted sweet potatoes. I also make sweet and sour braised carrots and celery (you can skip celery to reduce fibre content), leek pancakes (posted recipes several times here).

for main dish, I've done courgette flan/crustless quiche (you can make it just with egg whites), baked portabello mushroom or baked stuffed aubergine (the latter two are what I served a VEGAN on pesach, I use tomato sauce/sauteed veggie/nuts concoction for stuffing).

As for quinoa, KLBD pesach list is very evasive to the best of my knowledge. They usually say something like, there are some authorities that accept quinoa but it's not a majority view in Israel so LBD does not list quinoa on Pesachdick food list. Though you never know, check w/LOR.

Thanks Mrs B, very kind offer. I've already signed myself up to this one so I've given myself plenty of time to prepare. I've now got my sister's food list and it looks like some kind of veggie bake thing for first night and veggie ball thing for second night. I can't make ratatouille just because she can't have the seeds and skins of a tomato (grrr), well I suppose I could still make it, just she'd have to have her own, and then what's the point.

I now have the official list of good vs bad in my inbox to go through and of course some time before Pesach I'll trek round all the shops for their usual supply of random-food-only-available-for-pesach.

I usually make ratatouille with tinned tomato sauce, instead of fresh tomato. So no issue with seeds and skin...
