I would like to make breaded chicken for Shabbos. Can I make it today and then refridgerate it until tomorrow and then heat it up?
What is the best way to heat it up so that it won't get soggy?

Rewarm it uncovered. Otherwise it will be soggy.

I usually turn on the oven really high to heat everythign up before Shabbos and then shut off the oven with all the food inside. Should I still do that with the chicken uncovered?
Also, is it ok to make it today and re-warm it tomorrow?

I've found that meats reheat wonderfully but chicken not always. When I want to save time I buy fresh - not frozen - chicken, prep it, freeze it, and then put it in the oven about a half hour or so before I usually do.

But if possible, bake it fresh just a few minutes underdone before Shabbos like Pink suggested, and then do the really high heat thing right before Shabbos along with the other food.

I rewarm it in the oven for a few moments and pile them in baking paper in top of my soup pot on the hotplate.

You'll have to thank Ra_mom who typed it out for me last week. I just saved it in my recipe box. It is from Spice and Spirit.
Breaded Baked Chicken I
1 chicken, quartered
1 tsp salt
1/8 tsp pepper
1/2 tsp garlic powder
1 tsp paprika
1/2 cup mayo
1 cup breadcrumbs, cornflake crumbs, or matza meal
Combine salt, pepper, garlic, and paprika with mayo. Smear over both sides of chicken, the dip in crumbs.
Place skin side up in lightly greased 9x9" baking pan.
Bake covered in oven preheated to 350 for 45 min. Uncover and bake an additional 15-20 min.
