What to serve with Blintz Souffle

I can never figure out what side dish makes sense with blintz souffle. I don't like plain (lettuce and veggies) salad with it, just doesn't work for me. Anyone have any good ideas? I'm making it tonight and I'm stuck!

I can't imagine a tomato saucy veggie with it,

grilled veggies might work, but I think the contrast is to sharp

green beans sounds almost tempting, I'll have to think about that one...

Blintz souffle (I make the blintz puff recipe from Moosewood; I don't know how yours turns out) is delicious but rich and creamy and kind of bland-looking. I like some contrasting side dishes such as crispy just-cooked green beans or asparagus, crunchy bright-colored salads such as purple cabbage salad, tangy condiments (peach salsa, cranberry sauce) as well as the expected yogurt (or sour cream) and applesauce. Maybe clementines for dessert. Enjoy!

Not sure if this will help you, but I would definitely make a fresh homemade soup to round out the meal. To me, that goes better with the blintz souffle than any side dish I could think of. Especially b/c as the last poster pointed out, it is very rich and creamy, there are very few things I can think of that would taste good with it on the same plate (besides for applesauce, sour cream etc.) So I would start with a really good soup and leave it at that!

I'd also start off with a veggie soup, and then serve fruit salad and Greek yogurt as sides with the souffle.

Thanx for the ideas. In the end I nuked a package of frozen green beans. Instead of adding water to steam them I added a bit of orange juice. Worked perfectly.
