What kind of steak are you dealing with? Shoulder steak is a very tough cut of meat, and needs to be cooked in a sauce for a few hours at a low temperature. It is also best to use a bit of alchohol (wine or vodka) in your recipe if you are cooking a tough cut of meat. Adding fried onions and liquid to this kind of meat is essential. If you are working with a more tender cut of meat (I.e. Rib steak) you can simply spice and broil to your desired level of doneness.
