yum my mil gave me this great recipe
cook 1 butternut squash in microwave
mash
add 1 egg 2 egg whites
combine
put in pamed 9x9 pan
sprinkle with cinamon
bake at 350 till set
not sure how long

is that 1 egg PLUS 2 egg whites or 1 egg OR 2 egg whites.
Pls let me know I want to make this for shabbos

I have a yummy recipe (not a kugel though) that you can use either for butternut squash or sweet potato.
Cut sweet potatoes lengthwise, place unpeeled side up, put on honey, cinamon and all spice. bake for 25 min and then turn over for another 40 min.
For butternut squash I buy already cut up bec its a pain to cut up yourself. Pour honey and cinamon over it and bake for one hour.

I don't know if this is what you want, but I make apple compote with no added sugar. It's delicious, and especially refreshing when frozen.
