Pumpkin soup

Does anyone have a good and easy recipe for pumpkin soup using FRESH pumpkin. Fresh or can I substitute fresh instead of canned and how would that work?

Cook 800 g pumpkin in water, mash when cooked. Add a tablespoon of salt, continue to cook adding water according to desired thickness, and mix in two tablespoons of rice flour (can substitute cornflour, but I heard that it's not the same), stir. VoilĂ !

I make this recipe all the time - it's delicious!

ZESTY PUMPKIN SOUP

1/2 c. butter
1 c. chopped onion
1 garlic clove, crushed
1 tsp. curry powder
1/2 tsp. salt
1/8 to 1/4 tsp. ground coriander
1/8 tsp. crushed red peppers
3 c. chicken broth
1 3/4 c. pumpkin
1 c. Half and Half
Sour cream and chives (optional)

In large saucepan, melt butter, saute onion and garlic until soft. Add curry powder, salt, coriander and red pepper, cook 1 minute. Add broth, boil gently uncovered for 15-20 minutes. Stir in pumpkin and Half and Half, cook 5 minutes. Pour into blender if desired for creamier blend. Garnish with sour cream and chives if desired.

I also add some worchestershire sauce and nutmeg for added flavor - and I never have coriander so I never add it. I also put in more pumpkin than the recipe calls for. I use canned pumpkin, b/c once I used real pumpkin and it was such a pain in the neck.

Korean Pumpkin Soup: Cut approx. 800g pumpkin in chunks, cook, mash. Add water, 1 tablespoon salt, 1 tablespoon sugar and 2 tablespoons rice flour, cook on low flame until thickened, serve (makes about 4 not too big servings). I leave out the sugar and it's delicious.

I never see pumpkin, fresh or canned except for Halloween time

In the regular supermarket they carry it in the canned fruit section.
