Found one from choc. moose, thanks:
The Perfect White & Brown Meat Roll
can be used for Pesach too
WHITE MIXTURE
1 lb ground chicken breast, no skin
2 eggs
2 cooked and mashed potatoes
1 small onion sauteed in oil
1/2 tsp salt, optional
BROWN MIXTURE
1/2 lb chopped beef or dark turkey
1 egg
1 cooked and mashed potato
1 small onion sauteed in oil
1/4 tsp salt, optional
Combine all white ingredients and spread onto greases foil or parchment paper in a round shape, about 1/2 inch thick. Brush top with oil.
Combine all ingredients for dark mixture and spread onto another circular shaped paper, about 1/4 inch thick. Brush with oil. Invert directly over white mixture and roll up, leaving paper behind.
Rewrap well and twist edges. Cook or bake in meat loaf pan of salted water for about one to one and a half hours, at 350 deg.
Makes about a dozen, 3/4 inch slices.
P.S. You can probably just do the dark (brown) meat if you want, that's what we do. Freezes well, too.

question Chocolate moose... you bake it in water? not just wrapped I parchment on a foil pan?
I don't understand how you do this without it opening up and spilling out or getting soggy etc.

What sauce would you recommend I would really prefer it with a sauce.

I haven't made it but it looks good! Their stuff is great and basic.
How about a mushroom sauce? (I love meatballs in mushroom sauce too.)
