anyone know of a good recipe/idea I can use to make for shabbos day that can be served cold and using minced meat..

You can serve meatloaf at room temp.
If you want something a bit fancier/dainty, you can do scotch eggs

Do you have any puff pastry in the house? Make a Meatloaf Wellington and serve it cold.
