Pesach Meringues (lemon flavors)
3 - 4 egg whites
pinch salt
cup sugar
fresh lemon
Preheat your oven to 250 degrees.
You beat the egg whites in a mixer until very frothy and stiff. Add a pinch of salt and the sugar in small amounts. Squeeze the lemon into the mixture right before you start to pipe or spoon it onto your cookie sheets. Recipe makes 2 cookie sheets of cookies, about 12 each.
Let the meringues bake for an hour, then turn the oven off and let the cookies sit there overnight.
It's best to make the meringues right before bed, or right when you wake up, so they can sit in the oven undisturbed.

Sounds good and easy (and nut free!) Have you tried with orange or lime flavoring?

Hmmm, I have not heard of that. Do you mind if I ask what is the difference between citrus fruits?

the taste, I guess. I don't use any flavoring oils, when I make this during the year I add the zest of the fruit. that's plenty of flavor.

Oh I think we were talking about different things. I didn't mean oil or flavoring. When the recipe called for lemon, I thought of other citrus fruits, the juice or zest.

we don't use any peels on pesach and that includes zest. sure you can use oranges or whatever you like.
