Anyone have an easy potato kugel? Mine never seem to tastes very good. We only use shmaltz. Also any good sweet potato kugels?

Yum!! A shmaltzy kugel? I can smell Pesach in the air.
A kugel with shmaltz is best made fried on teh stove. Grate potatoes, an onion is optional. Mmix in an egg for every two large potatoes. Add salt and pepper to taste. Pour into a pan with sizzling shmaltz. Fry until crisp on the bottom. Flip it over on to a plate and slide it back into the pan. (add more shmaltz only if the pan is dry.) Fry until done.

Using dry starchy potatoes is best in my opinion.

Use your kugel blade or else a safety grater. (Safety grater is much much better, but is physically taxing.)

We don't use any fat.
Grate potatoes.
Grate a few onions
Mix with eggs, salt, garlic or other spices.
Bake.
