You can bake chicken with vegetables and water and wine.
You can rub spices on it. (Also with water and/ or wine)
You can make a glaze with oil and spices.
Can you use juice? I just cooked a chicken on top on onions and peppers. Rubbed the chicken with garlic and oregano, and poured tomato juice on top.
You can make apricot chicken. (using apricot preserves). I don't have a recipe off the top of my head, but there are a lot of options.
I used to make a cranberry chicken using cranberry sauce, and some other ingredients, which I can't recall at the moment.

Here are my two favorites. I use whole chicken, but you can also use pieces.
Garlic Paprika Chicken
Mix equal parts garlic powder and paprika. Add water to make a paste. Rub on washed chicken inside and out.
Honey Lemon Chicken
Rub cleaned chicken inside and out with two lemon quarters. Leave one inside cavity, and the other in the pan.
Prepare 2 T honey with 3 T oil (or chicken fat or margarine, melted) of your choice.
Preheat oven to 425. Cover bird with foil and cook for 20 min. Then, lower temp to 375, and remove foil. If making honey lemon chicken, pour sauce over bird. Continue cooking for another 40 minutes or so, basting occasionally. Chicken will be moist and not overdone.

This sounds good. Do you peel the lemon before putting it in the cavity, or do you leave the skin on?
