Scalloped Potatoes

From: Mishpacha Magazine

9-10 potatoes
2 lg. onions
6 tbsp. oil
5 tbsp. potato starch
½ cup mayonnaise
3½ cups water mixed with 3 tbsp. chicken soup mix
½ tsp. salt
pepper
paprika

Saute onions in oil until transparent and soft, about 7-8 minutes. Add potato starch and mix
well. Add mayonnaise, water and soup powder and cook 2-3 minutes until thickened. Remove
from flame.

Peel and slice potatoes into ¼” thick slices.

Pour 3 ladles of sauce into 9x13 pan covering surface entirely. Place a layer of overlapping potato
slices in pan. Top with more sauce, sprinkle with salt and pepper. Repeat twice, for a total of 3
layers each of potatoes top with sauce. Sprinkle with paprika.

Bake uncovered for 1½ hours at 350.
