I'm looking for a pesach spinach soufle/kugel parve recipe that stays moist and freezes well.
It must be non gebrochs
I usually (during the year) make it with parve bechamel sauce.
I don't know if this will work with potato starch.

I can't see why you can't make a bechamel style sauce out of potato starch and broth

16 oz frozen chopped spinach (thawed and drained)
2 T oil
2 onions (diced)
2 T Mayonaise
3 T water
2 eggs
1 T potato starch
1 t salt
1/4 t garlic powder
1/4 t onion powder
Heat oil in skillet. Add onions and sautee until translucent
add spinach and cook 15 minutes.
Remove from heat and allow to cool a bit
Add mayo and water.
Beat eggs, then add to skillet, stirring sot he eggs don't curdle.
Add the rest of the ingredients
mix
You can make these as a 9" round kugel or in muffin tins.
You can also substitute broccoli
