What to do with leftover vegetables from chicken soup

Most of the family are 'clear broth' drinkers and just throwing out all these cooked vegetables feels wrong. Any ideas?

saute a diced onion and 2 crushed garlic cloves in 2 Tbsp oil.
add cooked veggies and water to cover. blend with immersion blender.
season with salt to taste.
heat through before serving.
really good blended vegetable soup.

mash them, mash cooked chicken, add egg and spices, and fry as latkes or bake as a kugel.
