ok...from memory, cuz its very simple:
Slice 2-3 onions into thin half-moons. Heat 2 TBSP olive oil, butter or margarine in pan (dont use a non-stick pan, it comes out better.)
Sautee onions, stirring occasionally, for 15-20 minutes til caramelized and browned, scraping the bottom to get all the browned bits off. Transfer onions to prep dish.
Peel and slice 2-3 zuchini into half-moons. Add 4 more TBSP oil to pan.
Sautee, stirring occasionally, til browned, about 10 minutes. Scrape pan bottom to remove browned bits.
Add the onions back to the pan, and cook one more minute.
Season with sea salt and freshly ground black pepper.
Smart Balance makes a healthy, no bad fats margarine.
This dish tasted heavenly, and its low carb.
I added it to plain brown rice and it was perfect, but it's good on its own too.
