I made this over RH and it was such a hit. First I just boiled sweet potato till soft. Then mashed it.
Then I made bbq meat. Take chulent meat chunks and sear on all sides, then add bbq sauce- store bought or homemade- pour over meat and baked covered till soft. Cut into small chunks.
I used phyllo dough. In square shapes I did about 4-5 layers of dough and sprayed each layer with some oil spray. Then put a spoon of mashed sweet potato in the middle and top it with a few pieces of meat. Bring all the corners together and pinch tight, spray again with oil.
As you bake they open just a bit. Bake till crispy. I served these with bbq sauce on the side.

How long does it take for the meat to get soft when you bake it in the sauce?

For sure over an hour. But I really just kept it in the oeven while I was busy making other things so I'm not sure, I checked it a few times and stirred it, added some water if I needed.
