I bought some fresh, ground salmon on sale at my fish store - can anyone offer an idea? I've thought of gefilte, if anyone has a great recipe, and I'd love to try somethin more unusual.

Thanks - do you think that's good for shabbos? I'm looking for something elegant, although it doesn't have to be fancy or patchke.
No puff pastry, though.

I think it's all about presentation. Make a salmon pattie and place on lettuce w a couple sliced tomato and some dill dip - tastes good, healthy, looks nice

You can make into individual salmon patties or bake into salmon loaf. I'd definitely serve either one for shabbat.

I like the above posters idea. If you dont normally serve them during the week they can be plated elegantly and served on shabbos.

Salmon croquettes:
8 oz ground salmon
remove bones
1 small diced and sauteed onion
1 egg
1 handful matza meal
mix and fry

Add salt garlic and black pepper otherwise it'll be bland.

you probably used the fish by now but I'll post for the future uses. you can season them and make them into fish balls much like meatballs in a tomato/brownsugar/ lemon sauce

another vote for salmon croquettes ...
alternatively - spread out on parchment paper & fill with some veggie mix [think broccoli saute] then roll & boil ... could be a new invention
